Q. How can I make non-dairy smoothies?
Smoothies are made by blending chunks of fresh fruit, liquid (usually milk or yogurt) and ice. When using frozen fruit instead of fresh, there's no need to include ice, just add enough liquid to puree.
While there aren't specific proportions, a good smoothie has a milkshake-like consistency with a refreshingly thick, smooth, and chilled texture. I tend to use about 2 1/4 cups of frozen fruit to 1 cup of liquid, but there really is no right or wrong way to go. Too thick? Add more liquid. Too thin, add more fruit.
When it comes to non-dairy smoothies; rice or soy milk, fruit juice, and even water can easily stand in for the milk or yogurt. One of the nice characteristics about 100% fruit smoothies is that eliminating the dairy allows the flavor of the fruit to dominate.
For a super creamy pareve smoothie, blend in a few ounces of silken tofu. This magic ingredient consistently makes a decadently rich, I-can't-believe-it's-not-dairy smoothie.
