Q. How do I prevent fish from overcooking?
Most people don't realize that when fish is removed from the heat source it keeps on cooking. If a piece of salmon, cooked to medium rare, is left in a warm place for just ten minutes, it could be served well done. Remove your fish from the heat just a little sooner than you would expect, cover it with aluminum foil, and it will finish cooking while it is waiting to be served. Your fish will be cooked through, yet still be juicy and tender.
