Q. Is there a way to make a homemade version of parve chicken soup powder?
Powdered consommé and bouillon cubes are often overloaded with salt and laden with artificial flavorings and MSG. When making soup or any recipe that requires broth, consider making a big batch of your own deeply flavored (pareve) consommé which can be used as needed.
The recipe I make includes nutritional yeast flakes (for body, flavor and nutrition), turmeric (for color), granulated garlic and onion powder (for complexity), salt and dried herbs. You can adapt the mix to your liking; paprika will deepen the color, celery seed will add a slight tang, dehydrated vegetables will make it slightly more robust, and a pinch of sugar will mellow it out. Whatever combination of ingredients you use, nutritional yeast flakes, which can be found at health food stores, should be the base.
Just combine the ingredients, grind in a food processor or blender, and store in a covered container. The mix will last indefinitely. Reconstitute 2 generous teaspoons per cup of boiling water and use as in any recipe that calls for broth.
