Honey Nut Fruit Kabobs
Serves 8
- 1 large pineapple, peeled and cut in 1 1/2 inch chunks
- 2 bananas, peeled and sliced 1 1/2 inches thick
- 2 oranges, peeled and sectioned
- 3 tablespoons butter or margarine
- 2 tablespoons honey
- 1 tablespoon orange juice or orange liqueur
- 1 cup finely chopped almonds, walnuts or pecans
Arrange the pineapple, bananas, and orange chunks on skewers. Combine the butter or margarine and honey in a small bowl and heat (in a microwave or stove top) until melted. Stir in the orange juice or liqueur. Brush onto the fruit and sprinkle nuts on top.
Roast over a bonfire, or grill over a medium-low fire, until the nuts are golden brown, 5 to 10 minutes. Serve immediately.
Notes:
- Always grill fruit over indirect heat or slightly away from the heat source as the sugar in the fruit cooks fast and will cause the fruit to char if heated too quickly.
