Old-Fashioned Oatmeal Cookie Mix
Makes 1 quart mix, about 3 1/2 dozen cookies
- 2 cups of old-fashioned oats
- 1 cup of all-purpose flour
- 1/4 teaspoon of salt
- 1/2 teaspoon of cinnamon
- 1 cup of packed brown sugar
- 1 cup of raisins
- 1 cup of walnuts, chopped (optional)
To make the mix:
Layer the oats, flour, salt, cinnamon, brown sugar, raisins and walnuts in a 1-quart glass jar.
Instructions to make the cookies:
Preheat oven to 375. Mix together 1/2 cup of canola oil, 3 egg whites, and 1 teaspoon of vanilla in a large bowl. Add the cookie mix and stir until combined. Drop dough by the rounded tablespoons 2 inches apart on greased cookie sheets. Dampen fingers with cold water and flatten dough into 2-inch rounds. Bake 10 to 12 minutes or until cookies are golden, but not brown.
