Orange Sugar Cookies
- 1 cup vegetable shortening (like Crisco)
- 1 cup sugar
- 1 whole egg and 1 egg yolk
- 4 cups flour
- zest and juice of one orange
- 1 cup of sugar mixed with 2 tablespoons of cinnamon, or more to taste
Using an electric beater, blend the shortening and sugar until smooth and creamy. Add the egg and egg yolk. Mix to combine. Add the flour and liquid, alternating in small batches. Mix just until a soft ball of dough forms, taking care not to over mix. Refrigerate for one hour so the dough firms up.
Divide the dough into three sections. Place once section on a lightly floured surface and roll to about 1/4 inch thick. Cut out with cookie cutters. Place on a greased cookie sheet. Repeat with remaining dough. Bake one cookie sheet at a time for about 8 minutes. Immediately roll the cookies in a shallow bowl filled with the cinnamon-sugar. Let cool and store in air-tight containers. Cookies keep for about 3 days.
